| 90 minutes of pool running plus PT afterwards. Hip still a little sore from yesterday's run. Aaron and I have recently decided to cut way back on our meat consumption and focus on eating more vegetables, grains, and fruits. We watched the documentary Forks Over Knives a couple of weeks ago and also read this fascinating article which discusses the LDS health code, the Word of Wisdom in more depth. Its kind of alarming to me that I never came to this conclusion earlier but I do think it is best to eat meat sparingly or even better, not at all. We definitely eat WAY too much meat in this country and I want to be part of the movement to cut back. I am not convinced we need as much protein as the FDA would like to make us think we do. I can't say I'm quite ready to completely cut out dairy and eggs also but cutting out the meat and reducing dairy and eggs feels good. Any other vegetarians out there have favorite recipes or recipe sites you want to share? | Comments(3) |
